Easy Summer Rolls
Ingredients:
- 8-16 sheets of rice paper
- 1 large carrot, julienned
- 1 mango, thinly sliced
- 1 cup cabbage, shredded
- 1 small cucumber, julienned
- 1 small bell pepper, julienned
- Lettuce leaves, or any greens
- 1 avocado, thinly sliced
- Peanut Sauce for serving
Directions:
- Prepare rice paper by running each wrap under water for 5 seconds. You can do two at a time if you want two wraps per roll. Lay the first wrap down then top with second wrap, leaving about an inch of overhang.
- Lay the greens down in the center of the rice paper. Stack all of the veggies and mango so that you use about 1/8 per roll. Leave 1/2 inch clean on the sides.
- Start rolling the wrap from one end and tuck it gently but tightly over the top of the veggies. Fold over the sides and continue to roll.
- Enjoy immediately or the next day with a big bowl of peanut sauce!
Peanut Sauce:
- 1/2 c. peanut butter
- 2 Tbsp. soy sauce
- 1 clove garlic
- 1/2 c. milk or water
- 1 tsp maple syrup
- 1 Tbsp. lime juice
- 1/2 inch fresh ginger, or 1/2 tsp dried ginger
- Add all ingredients to a blender or food processor and blend until smooth.
